Hospitality Lead - Chef

Hours: 22.5 hours per week, 3 shifts with additional hours to cover holidays

What we are looking for...

We are looking for an experienced chef, who can create tasty dishes at a low cost, who enjoys cooking vegetarian and vegan options, experience in food safety systems and stock management is important as well as a love for people. This role will require you to work front of house, engaging with our customers and overseeing other team members and the volunteers - a strong team ethos and people person, with a great sense of humour is vital! We can promise a really friendly and passionate bunch of people to work with!

A bit about the cafe...

Hospitality is at the heart of The Old Library, the hospitality team run the community cafe, the events bar and are the first point of contact for all the people and organisations that use the building.

The Old Library Café is open Monday to Friday 9am to 4pm. Shifts are from 8.30am to 4.30pm. The cafe is a space that hosts lots of groups, other building users and the wider community. The cafe serves up breakfasts, light lunches and cakes at affordable prices to create a welcoming place for the community to engage in creative and well being activities.

We purposely keep the café prices as affordable as possible to make everyone feel part of the community here. This means that the cafe is reliant on a strong and committed group of volunteers. It is run by a small team of 4 part time staff.

The cafe seats 35 people, with additional tables in the kitchen garden in the summer as a standing or seated event it can have up to 60 people.

 

Role overview & purpose...

The Hospitality lead is responsible for both intoBodmin’s food and beverage offer - a vibrant and respected community café and events bar across various locations, and front of house hospitality at The Old Library - meeting and greeting building visitors such as regular community groups, room hirers and co-workers.

The role is a job share enabling continuous delivery of the food and beverage offer at The Old Library and intoBodmin events. We are looking for someone with catering management experience, ideally 2 years minimum at this level. It entails focusing on different strengths in the job share but with the ability to cover all areas in case of the other persons absence such as:

· Café management experience that encompasses service standards, bar management, F&B stock management and finance

· People management skills to oversee hospitality supervisor and volunteer recruitment, rota, training and supervision

· Professional/expert catering experience to run a safe and productive kitchen

· Interest in building community relationships building connections with the local community

A combination of flexibility, enthusiasm, innovation and sound organisational skills are essential.

 

Key responsibilities...

1. To work closely with co-director, the other hospitality lead and supervisors to create a sustainable food and drinks offer in the community café and event bars.

2. To manage all aspects of the daily running of the community cafe including food preparation, stock management, bar, barista and customer service.

3. To manage all aspects of the event bar including shift cover for larger events, stock, menus.

4. To be first point of contact for the wider building users including room hires, liaise with community groups & co-workers, ensuring the smooth delivery of these bookings.

5. Ensuring the smooth running and proper administration of the food and beverage offer through good management systems across people management, food safety standards and service standards.

6. To deliver an excellent and consistent customer experience, that is delivered across the whole team.

7. To develop and manage relationships with customers, community organisations, building users, volunteers and suppliers.

8. To manage a small team of 2 hospitality supervisors and a team of volunteers including their recruitment, training, supervision. Ensuring there are clear service standards in place and processes that are being followed.

9. To ensure good financial management through accurate costing and stock management system for all food and beverage. To manage the cash handling and accurate management of tills and cash float for community café and events, being accountable for any discrepancies that arise relating to daily takings.

10. To implement and document processes relating to food safety standards and to ensure that all staff and volunteers are adequately trained and applying these processes.

 

Knowledge and skills required...

· Proven management and organisational skills with thoroughness and attention to detail.

· Experienced decision maker with ability to work on own initiative without supervision with energy and persistence to see tasks through to successful completion.

· Excellent culinary skills and knowledge of food, ability to provide up to 30 lunches daily, with 2 years experience at catering management level

· Experience in people management in a similar setting to cover a small staff team and/or volunteer team

· Strong communication skills required with a wide variety of people, internally with colleagues to deliver hospitality services for events and external with building users and café customers. With strengths in both written and verbal communication required.

· A current Level 3 certificate in Food Safety in catering and Health and Safety is essential for this role, support in achieving this will be available.

· A high standard of numeracy will be required to manage the finances including budgetary control, manage costings, spend per head, gross profit and cash handling.

· Good IT proficiency required to oversee EPOS programming, rotas, emails & use of Microsoft Word & Excel to develop processes. Confident to learn new software used for event, activities and building user bookings.

· A friendly personality with a sense of humour and the ability to establish a rapport with a wide cross section of society.

 

Some practical considerations...

· There will be a need to work evenings and weekends at certain times during the year to meet operational need.

· Primarily the role is service delivery moving across all areas of hospitality e.g. events, kitchen and front of house service

· Driving will be required as part of the role, a full clean driving license and car with business insurance is essential

· A DBS will be required
